Classic Papdi Chaat — the street favourite
Serves 4 | Ready in 10 minutes
What you'll need:
- 20–24 papdi (store-bought or homemade)
- 2 medium potatoes, boiled and diced
- 1 cup boiled chickpeas
- ½ cup plain yoghurt, whisked smooth
- 4 tbsp sweet tamarind chutney
- 2 tbsp green mint chutney
- 1.5 tsp Kardemome Chaat Masala No. 09
- Sev, for topping
- Fresh coriander, to garnish
Method:
- Arrange papdi on a wide plate or tray.
- Scatter boiled potatoes and chickpeas generously over the papdi.
- Spoon yoghurt over everything — don't be shy with it.
- Drizzle tamarind chutney and green chutney over the top.
- Sprinkle Kardemome Chaat Masala evenly across the whole plate.
- Finish with a generous handful of sev and fresh coriander. Serve immediately.
Pro tip: Always add the chaat masala last, right before serving — it keeps the tangy flavour bright and sharp. If it sits too long it absorbs into the yoghurt and loses that signature zing.
