Mumbai-style Pav Bhaji — the classic recipe
Serves 4 | Prep: 15 minutes | Cook: 20 minutes
What you'll need:
- 2 large potatoes, boiled and mashed
- 1 cup cauliflower, boiled
- 1 cup green peas
- 1 large onion, finely chopped
- 2 tomatoes, finely chopped
- 1 capsicum, finely chopped
- 2 tbsp Kardemome Pav Bhaji Masala No. 108
- 3 tbsp butter (don't hold back — this is Mumbai)
- Salt to taste
- Pav buns, to serve
Method:
- Heat butter in a wide, flat pan on medium-high heat. Add onions and cook until golden.
- Add tomatoes and capsicum, cook until soft and mushy — about 5 minutes.
- Add all the boiled vegetables and mash everything together roughly with a masher or back of a spoon.
- Add Kardemome Pav Bhaji Masala and salt. Mix well and cook for 3–4 minutes, adding a splash of water if it gets too thick.
- Finish with a generous knob of butter on top, a squeeze of lemon, and finely chopped raw onion.
- Toast your pav buns on the same buttery pan until golden. Serve immediately.
Pro tip: The secret to great pav bhaji is mashing everything in the pan while it cooks — not before. It creates a deeper, richer texture than pre-mashing.
